In the book Diet and Health, I explained what brought us to our current state of 40 percent obesity in the Western world. My goal is to prevent type 2 diabetes, and to do that, I have to prevent obesity. I compared our historical diet to the modern Western diet, and showed how the modern diet has induced insulin resistance.

I offered treatment for those who are obese or have pre-diabetes. I then described the various maintenance diets. If you already have type 2 diabetes, I can help you control it.

Now I am going to explain why you get fat. It is not genetic. No one has genes that cause obesity. What you do have is epigenetic changes that modify how your chromosomes are expressed to give you your current problem. Epigenetics involves the expression of your DNA, and you accumulate epigenetic changes throughout your life, and even before you were born. These changes are based upon the environment of your cells, which is mainly determined by your diet.

I will teach you about the anatomy of the cell, DNA, RNA, and chromosomes. You will see the complex interaction between expression of the DNA and how you end up how you are.

Some of this material you may have heard before in school, but almost none of you have been taught anything about epigenetics.

This book is the introduction. The second book in the series I recently published, Fat Newborns, Infants, and Kids, stands alone, but is based on the information in this book.
