Must have cookbook!

I bought this book when it first came out, and then gave my copy as a gift to a friend who bought an Instant Pot. I missed the book, so I bought it again for myself. I am a veteran PRESSURE COOKER user and bought this initially because it is so rare to have cookbooks talk about using a pressure cooker to cook with. Especially for Indian recipes in cookbooks aimed at a Western audience. I STILL don't have an Instant Pot and certainly don't need one to adapt these recipes to my pressure cooker needs. Beyond that, the recipes are fabulous. Incredibly easy recipes to follow and with delicious results. If you are new to Indian cooking I highly recommend this collection.

Wow! This cookbook brought me back to my Instant Pot. Making incredibly delicious Indian recipes from it (we oohed and aahed), I learned how to use the different functions of the pot and stopped feeling so intimidated by it. I had been using a really lousy Instant Pot cookbook before, and this one showed me its amazing versatility with absolutely scrumptious dishes. Within a couple of weeks I had made cheese (paneer), used the high pressure, low pressure, soup, bean, and saute functions. I've made about a dozen of the recipes all of which were wonderful, but we especially loved the Shrimp Coconut Curry and the Chicken Tiki Masala. The introductory chapters are particularly helpful. I love to cook and own dozens of cookbooks. This is one that you don't just make one or two recipes from - you want to make them all!

Bought this on a recommendation when I bought my Instant Pot and am so glad I did! Recipes are very approachable--some take more time and effort than others, but almost all of them are easy weeknight meals. Explanations are clear and straightforward. Love the variety, especially of vegetable and legume recipes. Everything we have made from this book has turned out great. Also, I have been completely converted to basmati rice because of the book!

Delicious AND easily prepared Indian meals? Count me in! We'd always gone out for Indian, because I was completely intimidated by the thought of preparing it at home: Too many spices, too much prep work, and the cooking time? Fuggetabout it! Enter Pitre's gorgeous book. Not only are the photos in this book gush-worthy, so are the actual recipes. The ingredients are readily available, just in case there's no Indian market nearby, and the recipes are easy to execute. If you're ready for your IP to rise to new levels with minimum work, this is the book for you.

These recipes are amazing. Generally about 10 minutes of cutting and throwing things in the pot, then seal the pot up and wait 20 minutes or so. Tastes as good/better than what we've found at many restaurants. We live in a rural area without access to exotic spices (unless bought through the internet), so we really appreciate that these recipes call for ingredients that are easily obtained at common grocery/dry goods stores. The cooking settings are stated in terms of presets on an Instant Pot, but the times are given, too, so we've had no problem using our Quick Pot (i.e., different brand than Instant Pot). Very highly recommended if you like good Indian food, want something easily prepared, and don't have easy access to exotic ingredients.

I love this cookbook. Indian food has always been the on my reach but now I can make my favorite dishes. It is very easy to understand w/ straightforward instructions. I have made 4 recipes and they came out fabulous. Please note that a very good blender is needed as many recipes require pureering. I own a vitamix so that was not an issue but it is something to consider. .

I made Chicken Korma from this book tonight & my husband & I licked our bowls! Soooo good! I’ve had all the indian spices for a long time, but have always been too intimidated to use them. This cookbook was easy to follow & the dish came out restaurant worthy! Can’t wait to try the other recipes!
