Publisher's summary

Samin Nosrat reads "The Four Elements of Good Cooking", part one of her New York Times best seller Salt, Fat, Acid, Heat: Mastering the Elements of Good Cooking

A visionary new master class in cooking that distills decades of professional experience into just four simple elements, from the woman declared "America's next great cooking teacher" by Alice Waters.

In the tradition of The Joy of Cooking and How to Cook Everything comes Salt, Fat, Acid, Heat, an ambitious new approach to cooking by a major new culinary voice. Chef and writer Samin Nosrat has taught everyone from professional chefs to middle school kids to author Michael Pollan to cook using her revolutionary yet simple philosophy. Master the use of just four elements - salt, which enhances flavor; fat, which delivers flavor and generates texture; acid, which balances flavor; and heat, which ultimately determines the texture of food - and anything you cook will be delicious. By explaining the hows and whys of good cooking, Salt, Fat, Acid, Heat will teach and inspire a new generation of cooks how to confidently make better decisions in the kitchen and cook delicious meals with any ingredients, anywhere, at any time.

Echoing Samin's own journey from culinary novice to award-winning chef, Salt, Fat Acid, Heat immediately bridges the gap between home and professional kitchens. With a lighthearted approach to kitchen science, Samin demystifies the four elements of good cooking for everyone.

Very informative and insightful

I will look forward to having the .pdf version of the book but to hear it I think was easier to absorb the content.

Listening to it a 2nd time

This was the most informative "cookbook" I have ever listening too! Her tips will literally change the way I approach cooking. Her voice is perfect as the narrator and you can feel her love of cooking and the desire to share these techniques with the rest of the world!

Wonderfully accessible and fun listen! I am so inspired

I love cooking and always have. I have long taken for granted some of the implicit knowledge passed down from my parents and other teachers. Samin does a wonderful
Job of simplifying complex principles of cooking science and provides ample examples of real world applications. She is clearly passionate about culinary art and humble to share her lessons learned along the way. Highly recommend!

A Must Read If You Are Starting Any Level of Culinary Journey

I cook a lot, daily, but I’ve always wanted to understand the fundamentals. Boy this book hits it right on the money. Feel so excited and empowered to try new things in the kitchen. I was already bold enough before but know I know the information and fundamentals behind it all.

THE BEST

The best book about food and cooking I’ve ever heard. I loved listening to this while cooking, and am going to order the print book next. I was not into cooking much before this- thank you Samin! I think this and the Netflix series can help change our American society and help us become healthier people❤️

great!

I was a little worried that this would read more like a text book or a cook book, but it didn't. It felt very engaging. I learned a lot and loved listening to the author's journey, successes, and failures.

A must read

This book is great as an audio but the hard copy belongs in your library as a reference, whether you are a novice cook or an accomplished chef.
