Why are so many people turning vegan?
Some may have vegan friends and feel inspired to try new food, some may want to improve their own health and well-being, others may be dictated by their own feelings of compassion for farm animals or a strong concern for the environment. Some people might even be inspired by sports celebrities, actors, models, or influencers who are vegan.
The coronavirus pandemic we are facing has had such a dramatic impact on our lives that it has made us rethink our priorities and pay greater attention to our health and the environment. According to London-based market research firm Mintel, approximately 400,000 people in the UK alone have taken part in Veganuary 2020.
About 25 percent of Britons aged between 21 to 30 say that the pandemic has made a vegan diet more appealing. And it’s not only millennials. Overall, 23 percent of British consumers are eating more fruit and vegetables since the start of the pandemic, and almost one in five say that since the outbreak they have added more nutrients to their diet to help support the immune system.
But is veganism for everyone? Find out.

There will also be a brief chapter-by-chapter summary in the introduction so that the listener will know where the book is heading. If you haven't already, begin incorporating more whole grains, beans, legumes, tofu, nuts, and seeds into your diet. Once you feel comfortable moving forward, you can start phasing out dairy, eggs, and honey. Feel free to do this all at once, one food group at a time, or as slowly as you need to.

More than 30 years ago, nutrition researcher T. Colin Campbell and his team at Cornell University, in partnership with teams in China and England, embarked upon the most comprehensive study ever undertaken of the relationship between diet and the risk of developing disease. Food. There's plenty of it around, and we all love to eat it. So why should anyone need to defend it? Because in the so-called Western diet, food has been replaced by nutrients, and common sense by confusion—most of what we’re consuming today is longer the product of nature but of food science. The result is what Michael Pollan calls the American Paradox: The more we worry about nutrition, the less healthy we see to become.

What we do to our bodies, we do to the planet; and what we do to the planet, we do to our bodies. In Food Fix, #1 bestselling author Mark Hyman explains how our food and agriculture policies are corrupted by money and lobbies that drive our biggest global crises: the spread of obesity and food-related chronic disease, climate change, poverty, violence, educational achievement gaps, and more.

Worry about cholesterol. Avoid red meat. Eat whole grains. Could it all be a lie? We live in an era of health hype and nutrition propaganda, and we are suffering for it. Decades of avoiding egg yolks, choosing margarine over butter, and replacing the real foods of our ancestors with low-fat, processed, packaged substitutes have left us with an obesity epidemic, ever-rising rates of chronic disease, and, above all, total confusion about what to eat and why.

You are just 10% human. For every one of the cells that make up the vessel that you call your body, there are nine impostor cells hitching a ride. You are not just flesh and blood, muscle and bone, brain and skin, but also bacteria and fungi. Over your lifetime, you will carry the equivalent weight of five African elephants in microbes. You are not an individual but a colony. Until recently, we had thought our microbes hardly mattered, but science is revealing a different story, one in which microbes run our bodies and becoming a healthy human is impossible without them.

How much of our daily caloric intake comes from ingesting substances that, technically speaking, do not meet traditional definitions of “food”? Chances are, if you’re eating something that came wrapped in plastic and contains a funky ingredient you don’t have in your kitchen, it's most likely—almost definitely—ultra-processed food, or UPF.

Health-conscious Americans seek out vitamins any way they can, whether in a morning glass of orange juice, a piece of vitamin-enriched bread, or a daily multivitamin. We believe that vitamins are always beneficial and that the more we can get, the better - yet despite this familiarity, few of us could explain what vitamins actually are. Instead we outsource our questions to experts and interpret vitamin as shorthand for health.

In the 200 years since we discovered that microbes cause infectious diseases, we've battled to keep them at bay. But a recent explosion of scientific knowledge has led to undeniable evidence that early exposure to these organisms is beneficial to our children's well-being. Our current emphasis on hyper-cleanliness is taking a toll on our children's lifelong health. This engaging and important book explains how the millions of microbes that live in our bodies influence childhood development.

Every cow just wants to be happy. Every chicken just wants to be free. Every bear, dog, or mouse experiences sorrow and feels pain as intensely as any of us humans do.
