The Executive Sous in one of my previous kitchens highly recommended the Chefs PSA book to everyone in the kitchen. He had worked with Chef Andre as a young chef and often told us how inspired he was working in his kitchen.
When I started under him I was a first year culinary student with a lot of questions. I started as the garde manger trainee, and when I left that kitchen I was the lead line cook/chef de partie for brunch in downtown Austin. When I told my chef I was on to my next venture, he gifted me a copy of this book. It meant the world to me that he saw my potential and supported me even on my way out. After reading/listening to these books I myself feel my inspiration renewed.
I love this industry, even on the hard days. I love being a Chef. I’m extremely happy to be part of a community of Chefs who support each other on our individual journeys. I would recommend this to anyone else who does it for the love of the game.
