Dessert is not a compulsory part of a meal. Most people prepare complete meals without having a dessert. However, the fact that desserts are such an integral part of the American cuisine culture, people who suffer from diabetes often find themselves in difficult situations when having meals.

My father was diagnosed with diabetes when I was in high school. From the moment he learned of his condition finding the right selection of meals at home was a problem. We had to choose the foods we cook carefully to avoid preparing anything that might be a trigger to his blood sugar levels. Although we managed to find plenty of food alternatives, we always had problems when it comes to desserts.

★Desserts should be fun!

There are many ways you can prepare easy and delicious sweet treats, even on a low-sugar or no-sugar diet. Sugar substitutes are not the only answer to a low-sugar diet. While food science has certainly helped with sugar substitutes, there are other methods and ingredient combinations that are just as healthy.

There are many perspectives on which diabetes patients look at high sugar foods. Even doctors tend to give contradictory guidelines on the use of sugary foods to some patients. In this book, we will be looking at diabetes dessert recipes from the point of personal experience. There are guidelines provided by doctors on one side, and on the other side, there is an urge to taste something sweet, even if it's just once. This book will provide recipes that are just right to allow you to enjoy a moment of sweetness without putting your life at risk.

Here is a sample recipe. It's one of my personal favorites!

Low Sugar and Low Carb Pie Crust

1 cup almond flour

4 eggs

½ cup coconut flour

1/4 teaspoon salt

4 tbsp. cup olive oil

10-15 drops stevia extract (Adjust the amount depending on how sweet you want it to be)

Directions

1. Preheat the oven to 350°F

2. Into a food processor, place all the ingredients and blend for 2 minutes. (Ensure the dough is thick before stopping the processing. It will be light at first, but the dough will swell and become more firm as the liquid is being absorbed)

3. Line a pie dish with the grease of choice or parchment paper.

4. Using the palm of your hand and your fingers, flatten the dough at the surface of the dish. Ensure that the dough is evenly flattened and use a fork or any other sharp object to poke the dough at the bottom.

5. Bake for 20-25 minutes. Ensure the edges are evenly brown.

6. Allow the crust to cool, then add your pie filling.
