I appreciate that it was not necessary to buy any new exotic ingredients or utensils to master many of the cooking methods. Although the book does have a slant, understandably, towards certain/specific product types, they are easily found or substituted. And most importantly, there is not a lot of fat or salt needed in most of the dishes. Have made more than a dozen of various fish, meat, poultry and vegetable dishes from this book, and all have been wonderful.
