slow burn fizzled out

this novel felt like a slow burn in the beginning, like the story was building up to something bigger and then turned out to be nothing.
the lesbian relationship was a pleasant surprise at first but by the end just turned into something weird.

Historia
Working at the local processing plant, Marcos is in the business of slaughtering humans - though no one calls them that anymore. His wife has left him, his father is sinking into dementia, and Marcos tries not to think too hard about how he makes a living. After all, it happened so quickly. First, it was reported that an infectious virus has made all animal meat poisonous to humans. Then governments initiated the "Transition". Now, eating human meat - "special meat" - is legal. Marcos tries to stick to numbers, consignments, processing.

This book gives a good look into capitalism, the meat industry, and the idea of government manipulation. It was gruesome and detailed in a way that may scare some off.
The protagonist fell flat for me, he had strong opinions but was weak and it made the story much less compelling. Many of the side characters introduced were one note and all had the same underlying features.
